The mode is per-storefront, not per-item. If you need a hybrid (e.g. ready-stock items buyable online + bespoke items contact-only), use online ordering mode and label the bespoke items "enquire only" in the description with a contact CTA.
Each contact-button click is logged in your dashboard analytics, so you see which items drive enquiries. Items with high view-to-message conversion are your strongest catalog pieces — promote them harder.
